Sweet Summer Salad

This sweet summer salad was a big hit amongst my friends. Snap peas, corn, cucumber, feta, and mint, with a shallot vinaigrette, used the purple barley I received from @intermediatechef 🫶 Super easy to make but very unique and refreshing. I used the snap peas from the farmers market so they were soooo sweet. It’s hard for me to suggest measurements here - it’s truly up to you because it’s your salad! Do what your gut tells you based on how many you are serving and then adjust if you’d like more of any ingredient.
