This is a classic penne alla vodka, pizza-place style. There are two types of vodka sauce: thin and very creamy and this, thicker, made with shallots, pancetta, and crushed tomatoes. This is reminiscent of a vodka sauce served in a casual Italian restaurant that you can find in the suburbs of New York City, and reminds me of growing up.
Speaking of, one of my go-to orders was penne alla vodka with a chicken cutlet chopped up inside the dish. I know there are tons of criticisms on this but, I simply don't care! It's the best.
