Insalata Bianca (White Salad)

I was introduced to the concept of an insalata bianca or a white salad at @uvanyc. It’s basically just a salad but…. white, so no lettuce. This is made using a mandolin (which you must get...it’s the best tool in the kitchen) and thinly slicing fennel, apple, radish, and celery. Dressed with a lemon dijon vinaigrette, served atop mozzarella, and garnished with salty fried artichokes - it gives Italian coastline.
