Fall Radicchio Salad with Candied Nuts, Apple, and Gorgonzola

If I had to rate my favorite salads of all time, this would be in the top 3. This salad is earthy from the radicchio, sweet from the apple, balsamic and candied nuts, salty from the cheese, and an overall burst of flavor and texture. Every bite is a nice little surprise. Oh and did I mention full of nutrition?


I don't make a dressing because its quite frankly, not necessary. Each component shines on its own and I don't want a vinaigrette overpowering anything. A simple drizzle of olive oil and balsamic (in 2 layers) is good enough here. And don't forget the salt.


I would recommend serving immediately because the radicchio and apples do tend to oxidize if left out. I recommend using 1 head of radicchio and 2 apples which is very much enough to serve 4-6 people. Just double if you want to make for a crowd, which I would absolutely recommend! It's not only stunning but it tastes good. Enjoy
